Keep the affected sinks, dishwasher or floor gullies out of use. For restaurant drain unblocking, give the kitchen manager’s name, the nearest outside access and a period when the work can be kept away from food preparation.

If using one outlet makes wastewater appear at another, both may feed the same restricted branch. Moving washing-up to the next sink can therefore worsen the spill instead of keeping the kitchen open.

Protect food areas before the drain is opened

Separate wastewater, hoses and recovered material from food, clean equipment and customer routes. Staff should say which sinks, appliances and floor gullies have been stopped and whether any drain chemical has already been added.

Use an access point outside the kitchen where possible

A yard chamber or back-of-house gully may give a cleaner route to the same pipe. The drainage company still checks that it reaches the blocked branch rather than assuming the nearest cover is connected.

Where the only useful access sits inside, the manager can clear the work area and choose a time when food handling has stopped.

Trace the kitchen branch before choosing a method

Sinks, dishwashers and floor gullies can meet before the pipe reaches an outside chamber. Noting which discharge makes another level rise helps locate that junction and gives the visit a sensible starting point.

Grease lining or a single obstruction

Food debris or a local plug may be removed at one point. Grease coating a longer section needs the pipe wall cleaned and the loosened material controlled rather than simply pushed downstream.

The company decides whether rodding, drain jetting or another method suits the access and deposit it finds.

Test the branch under normal kitchen use

A brief trickle does not show how the drain will behave during service. Once the restriction is clear, the company tests the connected outlets in stages and watches the receiving gully or chamber.

The completion note records the access used, the section cleared and the grease or other material removed. It should also name any sink, appliance or hidden branch that was not part of the check.

Ask the manager to be present for this check. They can confirm which appliances normally discharge together and whether the kitchen has another branch that was kept out of use. This makes the result meaningful without running every fixture at once.

Use the visit record to plan kitchen maintenance

Heavy deposit near one sink may point to scraping and straining at that workstation. Build-up farther along the branch may call for a planned cleaning interval based on the kitchen’s actual use. Neither conclusion can be drawn from an invoice that only says “drain cleared”.

Put the location and first warning sign into the restaurant drain prevention checklist. Staff then have a short routine for grease disposal, sink strainers and reporting slow flow before wastewater reaches the floor.

Cooking oil and liquid fat should follow the restaurant’s waste arrangements rather than the sink. Strainers still need emptying during the shift, not only at close. If one station repeatedly slows first, record that detail instead of waiting for several connected outlets to stop.

Planned cleaning and an emergency clearance are separate decisions. Use the visit finding and the time between blockages to decide whether maintenance is justified. A fixed timetable copied from another kitchen may clean too early or allow this branch to fail again.
